Sun Prairie brewpub in the works
If financing efforts are successful, Brian Benzine and Ron Dombroski will open Sun Prairie’s first brewpub in the former Round Table building at 1611 N. Bristol St. In September, they announced they were seeking investors and raised more than $160,000 from nearly 20 supporters, according to an article in Isthmus.
The men want to name the business Prairie Brewing & Smokehaus, and they plan to focus on house beers and a menu that emphasizes smoked meats and barbecue. They have until mid-December to purchase the building, and if successful, they might open first as a restaurant, catering business, and bar before bringing the brewpub in next summer. The city has already granted a liquor license and conditional-use permit for the location.
