New Settle Down Tavern sets lofty goal

With a stated goal of creating one of the best bars in America, the owners of the new Settle Down Tavern, to be located at 117 S. Pinckney St., are setting their sights high.

The Wisconsin State Journal reports that the bar and grill, which is owned by the proprietors of a nearby men’s clothing store on King Street, promises to be a cozy place of just 1,300 square feet. The operators include Sam Parker, Ryan Huber, and Brian Bartels, the man who literally wrote the book, or shall we say books, on the fine art of drink-making. Bartels is the author of The Bloody Mary Book and the soon-to-be published The United States of Cocktails.

Parker promises to write their version of a classic Wisconsin tavern, and the partners hope to start construction next week with an opening slated for mid-December. They plan to be open daily between 11 a.m. and closing time and offer brunch on weekends.
