Former L’Etoile chef goes casual on Monroe Street
With the vision of a casual, chef-driven restaurant, the former head chef at L’Etoile is taking his culinary talents to Madison’s Dudgeon-Monroe neighborhood, according to an article in the Wisconsin State Journal.
Itaru Nagano hopes to open his new restaurant at the former site of Jacs Dining and Tap House, at 2611 Monroe St., by Feb. 1, but some minor renovations will be needed before then.
Nagano is bringing along former L’Etoile sous-chef Andrew Kroeger and Patrick Sierra, once a sommelier at Capitol Square restaurant. They look to produce classic fare such as roasted chicken and short ribs, along with items such as croquettes and pates.
As for a restaurant name, Fairchild is a leading contender because it’s the surname of Madison’s first mayor and because it’s their first restaurant operation.
