Dark Horse by Sal's opens in January
The so-called dark horse of the Madison culinary scene plans to open a restaurant of the same name in the former location of Sujeo on East Washington Avenue, according to an article in the Wisconsin State Journal.
Patrick DePula, who already owns two thriving Salvatore's Tomato Pies locations in Madison and Sun Prairie, will open another Italian-themed restaurant, DarkHorse by Sal’s, in January.
At DarkHorse, DePula and his partners, John Jerabek and Jed Spink, will offer handmade pastas, 10-inch pizzas with unique ingredient combinations, a lunch menu with grab-and-go options, and dishes that offer an element of surprise.
DePula’s success as a restaurateur comes despite having no previous culinary training.
