Chinese noodle restaurant to replace Knoche’s Old Fashioned Butcher Shop on west side
Taigu, a Chinese restaurant that serves homemade hand-cut noodles, is planned to occupy the former Knoche’s Old Fashioned Butcher Shop space on Madison’s west side, according to the Wisconsin State Journal; however, the city has yet to approve plans for its renovation submitted two months ago.
Knoche’s closed in October of last year, when Taigu owners Hong Gao and her husband purchased the building. The 84-year-old butcher shop and grocery will require extensive work for conversion to a restaurant space.
The building which housed the original Taigu, which opened in Middleton in 2014, is set to be torn down and replaced by a taller building. Hong’s lease there continues until March 2026.
